Do you HAVE to gut a fish before preparing to eat it??

It may seem a silly question, but I've just watched a video of a guy with a freshly caught cod. He simply made an incision behind the gills, on each side of the fish, then ran the blade along each side with the back of the knife against the backbone on each side, and had himself two fillets. I can't work out why he didn't need to gut it, and what happened to the stomach!

You need to gut any fish over three inches in length.
The guy who wow'ed you with his fillet skills did that by slicing two fillets off the fish above the fishes digestive tract.
There is little or no meat around the stomach- the fillets come from the meat between the ribs and backbone.

Guys who clean fish regularly are pretty damn good at it, huh?
